It's aged for at least 12 months,but there are high-quality parmesan cheese as well which are aged for 24 to 36 months and developing a granular texture with crunchy protein crystals.

gouda cheese
Gouda Cheese is made from cow's milk, sometimes with goat's or sheep's milk and has a smooth, creamy texture and a mild, slightly sweet, nutty flavor. Other unique thing about this cheese is as it ages, it becomes firmer, sharper, and develops crunchy tyrosine crystals and also there are different types of gouda cheeses.

pecorino romano cheese
Pecorino Romano Cheese is made from sheep's milk and giving it a strong, sharp, and slightly spicy flavor. Unlike Parmesan (which is nuttier and milder), Pecorino is saltier and sharper. It's aged for at least 5 months, but older one which is (12+ months) develop intense, tangy notes with a crumbly texture.
